Homemade Corn Tortillas are so easy to make once you have a batch

Ready in 30-minutes, taco night just became your favorite night. This recipe for homemade corn tortillas was inspired by my trip to Mexico, sailing along the coastline with Princess Cruises, I have never had such amazing food. Fresh corn tortillas, beans and rice – simple ingredients that made me feel full, both physically and emotionally.

I took a while to muster up the courage to try making corn tortillas from scratch, but just like my Best Ever Flour Tortillas recipe, once you make these tortillas at home, you’ll never want to buy store-bought again.

I not only loved the food while sailing along the California and Mexico coastline, but the views were breathtaking, the staff was top-notch and my company was even better.

Since the day I returned home from my 7-day Mexican Riviera Princess cruise – where I had the BEST tacos I’ve EVER had in Cabo San Lucas – I’ve been dreaming about them. My friend, Courtney, found a few taco shops on an app on her phone that we decided we needed (of course), and we couldn’t just try one.

The first street taco place we stopped at was the best one, and really, we should have just sat there all day and gorged on tacos. But I had plans to get some great souvenirs and swim with dolphins, so I couldn’t sit there all day.

Since we couldn’t sit there for hours on end eating tacos, we decided to order a quick second round, and well, it was amazing. From the fresh homemade corn tortillas to the assortment of fillings, I would literally set sail to Mexico just for these street tacos.

What is the best cruise?

On my cruise, I was aboard the Ruby Princess. But I hope the next one will be on the Royal Princess, debuting on the West Coast in March of 2019. It’s one of the newest, most elegant ship in the Princess fleet. I can’t wait to get my feet on board.

The Royal Princess destinations in 2019 will be the Mexican Riviera (my favorite), California Coast, Hawaii and Alaska.

While I have been on the Mexican Riveria, Alaskan and Panama Canal cruises – all with Princess Cruise Lines – I have to say that Mexico was my favorite, followed by Panama. Sorry, Alaska, you were majestic, but I am more of a warm weather girl.

How did the Royal Princess receive its name? It was officially named in 2013 by Her Royal Highness, Catherine, The Duchess of Cambridge – hence the elegance it brings

What to do on the Royal Princess Cruise ship

The Royal Princess will feature an overwater SeaWalk. This breathtaking 60-foot-long glass walkway stands 128 feet above the ocean and is one of the reasons I want to set sail in March. There is also an expansive Lotus Spa with The Enclave, home to Princess’s largest-ever thermal suite and a dramatic hydro-therapy pool with a cascading rain shower and therapeutic air jets, as well as an array of services and secluded couples treatment rooms. This alone my friends, is a dream. Just a few hours in the spa and everything else melts away.

Every spa experience has been top notch aboard any Princess ship.

And quite simply put, you’ll always find amazing pastries and cafe’.

Along with both of those amazing features, the Royal Princess will also have a live television studio and adults-only Retreat Pool and Sanctuary, something you need right? It will also feature a newly re-branded Camp Discovery youth center, something the kids need.

While March 2019 seems a bit far off, it isn’t so far off that I can’t go ahead and book a get-a-way for the hubby and I. Being spoiled for a week and catered to with delicious food and magical destinations, maybe this time we will hit Hawaii and see what foodie inspired eats we find when sailing on the Royal Princess.

Until then, this recipe for homemade corn tortillas will have to get me through the cold winter months. With the holidays here, you can bet that we will be making these weekly, along with the best ever flour tortillas too! Can’t have Taco Tuesday without them.

How to make homemade corn tortillas

TIP! The key to making the best corn tortilla is using a cast iron skillet. If you don’t have one, that’s ok, but the taste and texture when made in the cast iron skillet is the best.

In a medium bowl, mix together with a wooden spoon masa harina and hot water until thoroughly combined.

Turn dough onto a clean surface and knead until pliable and smooth. If the dough is too sticky, add more masa harina; if too dry, sprinkle with water. Cover dough tightly with plastic wrap and allow to stand for 30 minutes.

Preheat a cast iron skillet or skillet to medium-high.

Divide dough into 15 equal-size balls. I use a cookie dough scooper and generously scoop – sometimes I get less than 15.

Use a tortilla press or roll out the tortillas with a rolling pin. I use parchment paper, not wax paper. But everyone else I know uses plastic wrap or Ziplock bags. Use what works for you.

Immediately place tortilla in preheated pan and allow to cook for approximately 30 seconds or until browned and slightly puffy. Turn tortilla over to brown on the second side for approximately 30 seconds more and transfer to a clean towel. Repeat the  process with each ball of dough.

Keep tortillas covered with the towel. I just fold the towel in half and place them on one half and cover with the other. This allows them to stay warm and moist until ready to serve.
